To shampoo or not shampoo

hello ive noticed a problem when i started using natural shampoo it would not wash out my hair and that ended up in buildup and my hair started to smell moldy so ive stopped using shampoo and started doing rinse with lemon water and whatever herbs and using cold water ...does anyone have advice on how to get the shampoo out the head without leaving build up or what might cause it or it would be better not to shampoo..
