I was wondering if pure organic peppermint oil goes moldy or something? ill dilute it with water and still the next day i wake up smelling something weird om top of the peppermint. It really helps with the itches though

it's oil. oil doesn't get moldy.
How often do you spray? It could be that every time you spray, you're getting your hair a little wet. you really should keep it dry unless you are washing it.
if it is good quality oil(not $2 bottle) it should be fine for ever, the cheaper you pay the less pure it is.
if Baba is right and your getting you hair constantly wet it may be getting a little mouldy(stale wet smell) so try keeping them drier and also put some lavender oil in with the peppermint(in the water not the oil)it's good for mould. i use it all the time for the itches smells and works great.
